This recipe was learned first-hand while cooking and working in Thailand. Our most daring dish, it balances the sweetness of coconut milk with the spiciness of bird chiles, the acidity of lime and the brightness of lemongrass and ginger. Perfect for the adventurous eater.

- Open bag and remove oxygen absorber.
- Add boiling water to the fill line.
- Stir and reseal for 12-15 minutes.
- Open, stir, check hydration and add more water if needed. Seal another five minutes.
- Use good judgment to decide readiness.
